The dramatic color change during cooking has todo with the way certain biochemicals inside the shellfish react toheat. Lobsters and crabs have a pigment called astaxanthinin their shells. Astaxanthin is a carotenoid pigment: absorbingblue light and appearing red, orange or yellow incolor.
